This vinaigrette is based on the humble tomato ketchup and combines ingredients you’re bound to have in your cupboard with plenty of fresh herbs to make a really tasty vinaigrette for fish or chicken. Try it with salmon fillets or roast chicken.

  • 200ml olive oil
  • 150ml tomato ketchup
  • 2tbsps chopped shallots
  • 1tbsp chopped tarragon
  • 1tbsp chopped chives
  • 1tbsp chopped chervil
  • 1tbsp Worcestershire sauce, Tabasco®
  • 1tsp white wine vinegar
  • Fresh herbs to garnish (e.g. parsley, chervil, basil or tarragon)


  • Mix everything together. I’ve suggested chervil and tarragon for this recipe but if you can’t get chervil use parsley. If you can’t get tarragon, use basil. It’s your choice.
