Delicious creamy mashed potatoes, enriched with lashings of butter, are an occasional treat only. But there are plenty of ways of smartening up your spuds the healthy way. Try these.
- Crush potatoes with a fork and mix with olive oil, parsley and a bit of pepper. Good with grilled fish.
- Try using less floury varieties of potato such as Ratte, pink fir apple or Anja potatoes. Their taste and texture is so distinctive, they barely need butter.
- Roast potato wedges in the oven as a healthy alternative to chips. Thick cut chips with the skins on absorb less oil than the skinny, peeled variety.
- Rather than seasoning your potatoes with salt, opt for chopped fresh herbs. A handful of parsley, dill or mint works wonders.
- Alternatives to butter in your mash or jacket potato include low fat crème fraîche, perhaps with a spoon of mustard or pesto.
