Sea Bream with Caramelised Oranges and Coriander

Orange juice, olive oil and fresh herbs. A magical combination

This is very Mediterranean. Fresh fish, bay leaves, oranges, olive oil, fresh coriander – all those wonderful flavours of summer in Italy or Greece. I’m always generous with the olive oil because I’m half Italian. Imagine if I was full Italian!

Ingredients

  • 4 small sea bream, gutted and cleaned
  • 2 Knorr Fish Stock Cubes
  • 1-2tbsp olive oil
  • 1tsp coriander seeds (to taste)
  • A few bay leaves
  • 3-4 oranges, quartered
  • Fresh coriander leaves
  • Rock salt

Fresh herbs burn on the barbecue, so it’s better to season with a Knorr cube

Method

1. Make your seasoning with the Knorr Fish Stock Cubes and a little olive oil mixed together to make a paste.

2. Place coriander seeds on a chopping board and crack them with the side of a knife (fresh coriander would burn, hence why we use the seeds). Add to the paste.

3. Massage the paste on both sides of the fish and in the cavity.

4. Place the fish in a fish cage, add the bay leaves and cook for around 10 minutes, leaving the skin on to help protect the fish. Turn over regularly.

5. Put the oranges on a hot griddle pan to caramelise for about 10 minutes, turning them over regularly.

6. Place your fish on a platter. Add some olive oil, some salt crystals, squeeze some of the warm juice from the oranges over the fish and garnish with fresh coriander.

7. Garnish the plate with orange pieces and serve.
