Simple fresh summer side salads
An alternative to using green leaves; simply add beans, peas and rice together for a refreshing summer salad.

1. Take some shelled broad beans and peas.
2. Add some mayonaise and a little cooked white rice.
3. Add some sliced sping onion, some chives.
4. Mix it all together then add some olive oil and fresh lemon juice. Simple, quick and delicious.
