Ingredients

  • 20ml water
  • 100g butter
  • 1 Knorr Vegetable Stock Cube
  • Handful of tarragon, chives and mint, roughly chopped
  • 3 large handfuls frozen peas
  • Tablespoon olive oil

You really can impress people with this recipe using frozen peas. The addition of a little butter and plenty of chopped fresh herbs really lifts them to another level.

Method

Take your pan and pour in 20ml water plus 100g butter. By boiling the water and butter together, it emulsifies so it sticks to your peas. Crumble in a Knorr Vegetable Stock Cube and dissolve. Prepare your herbs, use soft ones like tarragon, chives and mint - chop then roughly. Add your defrosted peas to the pan, a few large handfuls, enough for six. Heat them through then take your herbs, this adds freshness. Pour on some olive oil and serve.
