Zest

The zest is the outermost skin layer or rind of citrus fruits that contains aromatic essential oils. Only the coloured portion of the skin (and not the white pith, which can be bitter) is considered the zest. The zest can be removed from the surface of fruits (usually oranges or lemons) using a grater, potato peeler or zester.
