French forcemeat loaf that is served at room temperature. Similar to a pate, it is served in a pork fat-lined dish (also called a terrine) and uses more coarsely chopped ingredients. Traditionally, when the contents of the terrine dish are removed or un-moulded, they go from being a terrine to a pate; although today the two terms are often used interchangeably.
Despite being made up of more coarsely textured ingredients than a pate, a terrine may be spread onto toast in the same way. It is usually made using meat such as pork, veal, liver or ham and may also be made from fish, poultry or game. Seasonings and fat are usually also included in the mixture, which can be combined before or after cooking.
Pates and terrines may be hot or cold and are usually served as a first course or appetiser.
