Smoking is a method of curing which treats food (such as meat, cheese or fish) by one of several methods in order to preserve it. Smoke-curing or smoking is generally done in one of two ways. The cold-smoking method (which can take up to a month, depending on the food) smokes the food slowly at a low heat. Hot-smoking partially or totally cooks the food as it uses higher temperatures. Depending on the types of wood and variations within the process, foods can acquire different tastes from being smoked.
